I've been thinking a lot about this game recently, so I'm going to go ahead and recommend #Western Legends. It's a great sandbox game with open-world elements. Very satisfying to wander around doing what you want. Even if you're not crazy into western-themes (like me), this is still so much fun.

It was talked about recently so I broke out an old classic, #Ethnos yesterday and played with my wife and kids as it had been awhile. My daughter enjoyed it and my son won (which means he enjoyed it ;) ). This is not an overly complex game, mostly gathering cards and playing a "hand" and laying all the cards you didn't play in your "hand" for other to pick up. Being as simple as it is there are several elements to this game that allow it to maintain increasing strategy as player grow with the game.
1. There are 12 "Factions" of which you will only use 6 during your game. What this means is a lot of game diversity between games as each faction has its one special ability that influences the game play.
2. The area control aspect of the game influences point and faction decisions each round lending to increase differentiation round to round
3. The game supports up to 6 players I believe lending to a great experience from 2-6 players.

Its an old game but its great . My friends and I have been playing a lot of #Carcassonne on TTS its great ! We've been mixing and matching a bunch of different expansions and its just a great great time.
